Gajar Matar or Gajar Aloo Matar is the perfect sabzi to serve in winters with any meal. Gajar Matar is fresh and healthy sabzi is commonly made in winters mostly in Resturants and Dhaba of the Indian subcontinent. This is the best home made Gajar Matar Aloo Ki Sabzi recipe at home you will find. Carrots and fresh green peas are readily available only during the winter months in India. This Gajar Matar aloo ki sabzi is healthy and easy to make. Gajar Matar is a perfect dish and you can with roti or paratha.

Ingredients
Carrots - 1/2 Kg chopped in small cubes
Green Peas - 300 grams
Potato - 1 chopped in cubes
Asafoetida powder (hing) - a pinch
Cumin seeds (jeera) - 1/2 tsp
Ginger - 1 tsp chopped
Green chilli - 1 chopped
Turmeric powder - 1 tsp
Red chili powder - 1/2 tsp
Salt - 2 tsp
Black Pepper Powder - 1/2 tsp
Fresh coriander leaves - finely chopped
Dry Mango powder (amchur) - 1/2 tsp
Mustard oil - 1 Tbsp or any oil of your choice


Method:
Take a pan, add oil.
Add cumin seeds and hing powder.
Add ginger and green chilli, fry for a min.
Mix well and add turmeric powder.
Add chopped carrots, potatoes and peas.
Mix well and add salt and red chili powder.
Cover with closed lid and keep on low flame for 8 to 10 mins.
Mix in between one of twice and cook till all vegetables get soft.
Now at last add dry mango owder and black pepper powder.
Add fresh coriander leaves and mix well.
Gajar Matar Aloo ki Sabzi is ready to serve hot with chapatti's.
