CHICKEN PHO: Pho noodles are made from rice from Ha Giang. Mix rice flour and cornstarch together with water. Spread mixture on a flat surface and steam for two minutes. Hang the steamed batter to cool. Once cooled, fold and cut into noodles. Boil the broth for 24 hours using chicken bones and meat with some special herbs such as Pa Khat. Cuts: chicken comb (mao g), undeveloped eggs, blood cakes, and pancreas. Assembly: noodles, meat cuts, chicken broth, and then vegetables.

CRAB NOODLE SOUP: Bnh a is made from rice. Assembly: Soak the veggies (morning glory & water mimosa) and the noodles in hot water for a few seconds then place them in a bowl. Soak the raw beef in the broth and add to the bowl. Add minced crab, and the crab cake, then the broth. Top with fried shallots.

DRIED EELS WITH GLASS NOODLES: Grill over charcoal for 15 minutes. Split eels in half and debone. Dip eels in flour and deep-fry for five minutes. | Noodles: Glass Noodles are noodles made throughout Asia from starches like green mung bean flour, arrowroot starch, cornstarch, sweet potato starch, and/or tapioca. Mung bean flour is perhaps the most commonly used starch for them.
| Assembly: Soak noodles in broth with the bean sprouts, then drain and place them in a bowl. Add shallot oil, MSG, soy sauce, and cucumbers. Serve with the broth.
