These vegetable wontons are baked instead of fried - so you can indulge guilt free.

VEGETABLE WONTONS

Ingredients

8 wonton sheets
¼ cup finely chopped babycorn
2-3 tablespoons boiled sweet corn kernels
¼ cup chopped mixed capsicums (red, yellow and green)
¼ medium cabbage, shredded
2 teaspoons oil + as required
1 teaspoon crushed green chillies
2-3 fresh coriander stems, chopped
Crushed black peppercorns to taste
Salt to taste
½ teaspoon sugar
1 teaspoon soy sauce
1 tablespoon red chilli sauce + for serving
100 grams cottage cheese (paneer), cut into small pieces
1 tablespoon chopped fresh coriander leaves
¼ cup refined flour (maida) slurry

Method

1. Preheat oven to 180° C.
2. To prepare stuffing, heat oil in a non-stick pan. Add green chillies and babycorn and sauté till babycorn turns golden brown.
3. Add corn kernels and mixed capsicums and sauté for 30 seconds. Add cabbage, coriander stems, crushed peppercorns, salt, sugar, soy sauce, chilli sauce and cottage cheese and sauté for 1-2 minutes. Switch off heat, add coriander leaves and mix well. Transfer in a bowl and cool.
4. Put some stuffing in the center of each wonton sheet, apply some slurry on the edges and fold into triangle. Twist the ends and press to seal to shape into wontons, applying some slurry.
5. Grease a baking tray with some oil. Place the wontons and brush some oil on top.
6. Put the tray into the preheated oven and bake for 10 minutes.
7. Serve hot with chilli sauce.
