VEG PERI PERI NUGGETSIngredients5-6 French beans, chopped½ medium green capsicum, finely chopped½ medium red capsicum, finely chopped½ medium yellow capsicum, finely chopped¼ cup grated broccoli1½ teaspoons peri peri spice powder2 medium raw bananas, boiled, peeled and mashed1 tablespoon oil + for deep-frying1 teaspoon paprika½ teaspoon sugarSalt to taste1 teaspoon cornflour1 teaspoon + 2 tablespoons refined flour (maida)¼ cup panko breadcrumbs¼ cup crushed cornflakesMint mayonnaise dip for servingMethod1. Heat 1 tablespoon oil in a non-stick pan. Add French beans, green capsicum, red capsicum and yellow capsicum and sauté for 1-2 minutes. 2. Add broccoli and bananas, mix and cook for 1-2 minutes. Add 2-3 tablespoons water and mix well.3. Add paprika, peri peri spice powder, sugar and salt, mix and cook for 1 minute. Add cornflour and 1 teaspoon refined flour and mix well. Transfer in a bowl and cool.4. Heat sufficient oil in a kadai. 5. Take remaining refined flour in a bowl. Add some water and mix to make a smooth slurry. 6. Mix together panko breadcrumbs and cornflakes on a plate. 7. Divide the vegetable mixture into small equal portions and shape into oval tikkis. 8. Dip each tikki in slurry and coat with cornflakes.9. Deep-fry the prepared tikkis in hot oil till golden brown and crisp. Drain on absorbent paper. 10. Serve hot with mint mayonnaise dip.
