UPVAS BATATA BHAJI Ingredients 3-4 medium potatoes (batata), boiled and peeled1 tbsp ghee1 tsp cumin seeds1-2 green chillies, chopped1 tbsp roasted and crushed peanutsSalt to taste1 tbsp fresh scraped coconut1 tbsp chopped fresh coriander leavesRajgira puris for servingMethod1. Heat ghee in a non-stick pan. Add cumin seeds and sauté for 30 seconds. Add green chillies and mix.2. Crush potatoes into the pan and toss. Add ¾ cup water, mix and lightly mash.3. Add peanuts, salt, coconut and coriander leaves, mix and cook for 1-2 minutes.4.
