Undalkal Konkani Recipe Sanjeev Kapoor Khazana

A special recipe from the Konkan region which looks like small pearls mixed into a sweet mixture of coconut and jaggery. Get ready to indulge in this sort of deconstructed Modak today itself!

UNDALKAL

Ingredients

1 cup rice flour
1 tsp + 1 tbsp ghee
A pinch of salt
cup chopped jaggery
1 cup scraped fresh coconut
tsp green cardamom powder
A pinch of nutmeg powder
1 tbsp chopped cashew nuts
1 tbsp chopped almonds
1 tbsp chopped pistachios

Method

1. Heat 1 cup water in a deep pan. Add 1 tsp ghee and salt and mix well. Bring it to a boil.
2. Add the rice flour and continuously stir till well combined. Cover and cook on low heat for 1-2 minutes.
3. Switch the heat off and transfer the mixture into a parat and knead with the help of a small stainless steel bowl while the dough is still hot.
4. Once the dough is warm, use your hand to knead the dough till its smooth. Take small portions of the dough and shape each portion into a ball.
5. Heat remaining ghee in a pan. Add the prepared dough balls and saut on low heat for 2-3 minutes. Transfer the mixture on a plate.
6. Add the jaggery into the same pan and cook till it melts. Add coconut and mix well. Cook for 1-2 minutes.
7. Add green cardamom powder, nutmeg powder, cashew nuts, almonds, pistachios, and mix well. Stir in the prepared dough balls and mix well.
8. Serve warm.
