Turkish Stuffed Cookies, 2 Ways & Special Brunch Table With Guests

Hello from Istanbul. This is Aysenur Altan. I have a Turkish stuffed cookies recipe for you. It has pistachio or hazelnuts and coconuts filling in it. You can use cookie mold to shape or do it by hand. You are going to love the crumbly texture and the look if these special cookies.

Ingredients for Turkish Stuffed Cookies:
For the dough:
125gr. butter at room temperature
1 cup or less than 1 cup powdered sugar
1/3 cup vegetable oil
100ml. 3 tbsp plain yogurt
1/2 cup semolina flour
1 tsp baking powder
1/2 tsp baking soda
4-5 drops of lemon juice
about 3+1/2 cups all-purpose flour
For the filling
1/2 cup unsweetened coconut flakes
1/2 cup or more ground pistachio or hazelnuts, walnuts
1/2 cup powdered sugar
1 egg white
(You might need more nuts or coconut flakes of your choice to have a stiff consistency that keeps its shape when you fill the cookies)
