TURKISH SCRAMBLED EGGS - Menemen Recipe

In this episode, I'd like to share with you 'Menemen', Turkish scrambled eggs recipe. Whether for breakfast, lunch or a light dinner... It is just perfect for summer. And so easy to make, all you have to do is chop some veggies. It tastes so amazing, promise :)

INGREDIENTS (for 2)

1 large onion
4 long green peppers (or 2 green bell peppers)
2 large tomatoes
4 eggs
Salt & Pepper
A pinch of granulated sugar
Paprika (optional)
2 tbsp olive oil

DIRECTIONS

Finely chop the onion and peppers into cubes.
Heat the olive oil in a pan.
Add the chopped veggies and a pinch of salt.
Saute until tender for about 10 minutes over medium low heat, stirring occasionally.
Meanwhile; either grate the tomatoes, or peel and cut into cubes or don't peel and puree in a blender.
When the veggies are tender, add tomatoes and stir.
Add a pinch of salt, black pepper, sugar and paprika if desired.
Give it a stir and cook for 10 minutes without stirring, over
medium heat.
After 10 minutes reduce the heat and crack the eggs into the pan.
Cover with a lid and cook for one minute or so.
Then remove the lid and cook for another 3-4 minutes, stirring gently, until just barely set.
Taste for seasoning and add salt if needed.
Sprinkle with freshly ground black pepper on top, turn off the heat, stir and serve immediately with plenty of fresh bread.
