Turkish Gozleme
Recipe in English:

Ingredients:
-Olive oil 2 tbs
-Pyaz (Onion) chopped 1 medium
-Palak (Spinach) chopped 250g
-Kali mirch powder (Black pepper powder) 1 tsp
-Feta cheese 100g
-Dahi (Yogurt) Cup
-Olive oil 2 tbs
-Spinach & feta filling 2-3 tbs or as required
-Mozzarella cheese grated as required
-Olive oil 1-2 tsp
Dough:
-Safed atta (Fine white flour) sifted 2 Cups
-Namak (Salt) 1 tsp
-Cooking oil 2 tbs
-Water 1 Cup or as required
-Cooking oil tsp

Directions:
-In a wok,add olive oil,onion & saut until translucent.
-Add spinach,mix well & cook for 1-2 minutes.
-Add black pepper powder and mix well.
-Take out in a bowl and let it cool.
-Add feta cheese,mix well & set aside.
-In a small bowl,add yogurt,olive oil,whisk well & set aside.
-In a bowl,add fine white flour,salt & mix well.
-Add cooking oil & mix well until crumbled.
-Gradually add water and knead until medium soft dough is formed.
-Grease with cooking oil,cover & let it rest for 15-20 minutes.
-Dust dry flour and knead dough again then divide into three parts.
-Take one part & make a ball,dust dry flour & roll out with the help of rolling pin as thin as possible.
-Add and spread 2 tbs of prepared yogurt & olive oil mixture over the rolled dough and flip two parallel sides of dough towards the center.
-Add & spread prepared spinach & feta filling,flip the other two parallel sides of dough towards the center and press gently (makes 2).
-Heat griddle,place stuffed gozleme & cook from both sides for a minute.
-Brush olive oil and fry from both side until golden brown.
-Cut into piece & serve!

Ajza:
-Olive oil 2 tbs
-Pyaz (Onion) chopped 1 medium
-Palak (Spinach) chopped 250g
-Kali mirch powder (Black pepper powder) 1 tsp

-Olive oil 2 tbs
-Spinach & feta filling 2-3 tbs or as required

-Safed atta (Fine white flour) sifted 2 Cups
-Namak (Salt) 1 tsp
-Cooking oil 2 tbs
-Water 1 Cup or as required

Directions:
-Karahi mein olive oil aur pyaz dal ker translucent hunay tak saut ker lein.
-Palak dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein.
-Kali mirch powder dal ker ache tarhan mix karein.
-Bowl mein nikal ker thanda ker lein.
-Feta cheese dal ker ache tarhan mix karein & side per rakh dein.
-Chotay bowl mein dahi aur olive oil dal ker ache tarhan whisk ker lein & side per rakh dein.
-Bowl mein safed atta aur namak dal ker ache tarhan mix karein.
-Cooking oil da ker crumbled hunay tak ache tarhan mix ker lein.
-Thora thora ker ka pani shamil karein aur ghond ker medium soft dough tayyar ker lein.
-Cooking oil sa grease karein aur dhak ker 15-20 minutes kliya rakh dein.
-Atta chirak dein aur dough ko dubara ghond lein phir 3 parts mein divide ker lein.
-Ek part la ker ball bana lein aur atta chirak ker rolling pin ki madad sa thin bail lein.
-Rolled dough per 2 tbs tayyar dahi & olive oil mixture dal ker pheela lein aur parallel sides ko center ki taraf flip ker lein.
-Tayyar palak & feta filling dal dein aur parallel sides ko center ki taraf flip ker lein aur gently press karein (makes 2).
-Tawa garam karein aur stuffed gozleme dal dono sides sa ek minute kliya paka lein.
-Olive oil laga ker dono sides sa golden brown hunay tak fry ker lein.
-Pieces mein cut ker ka serve karein!
