Turkish Eggplant Kofta Kebab (Parmak Kebab)

Eggplant And Kofta Kebab is a delicious way of making an eggplant dish.. Did you know that Turkey is famous by having more than hundreds of kind eggplant dishes. This one is called "Parmak Kebab" in Turkish cuisine. Originally it is made with chunks of cubed boneless meat either from lamb or beef. But making it with kofta balls is a lighter and beautiful variety too.

Ingredients For Turkish Eggplant Kofte Kabab:
For the kofte balls:
1 medium onion
2 slices of 2-3 day old bread
400gr. ground meat - (optional but better if its a bit high on fat content and mix of lamb and beef )
1/2 tsp each salt, ground red pepper, cumin and black pepper
2-3 tbsp water
1 tsp tomato paste
For the veggies:
4-5 thin long eggplant (better if you get in the same sizes for the shape)
5-6 green peppers
For the tomato sauce:
1 cup of tomato sauce or 3-4 big ripen tomatoes, grated and cooked in 3-4 tbsp olive oil (add garlic for a more taste)
1/2 tbsp tomato paste
1 to 1 + 1/2 cups hot water (until the dish is half way full when it is poured over)
salt to taste

In this episode we are making eggplant and kofta kebab in different style
In Turkish we call "parmak kebab"
With partially fried veggies and topped with tomato sauce it is really delicious option for making eggplant dish.
Also great for Ramadan too so lets get started
First i am going to make the meat balls kofta mixtures.
If you have time it is better you make your kofta dough in the early time. And let it rest so the taste will get matured in together.
I have one medium size onion cut in four
and two slices of day old bread.
First i am going to mix them to make a crumble
And now i can add my ground beef it is about 400 grams
If you prefer you can use lamb meat or mix with beef or and lamb together
I am adding one teaspoon salt
This is my actual tea glass tea spoon so it is half tea spoon if you are using a measurements.
I should make a video about measurements also in Turkish way.
I added half a teaspoon ground red pepper and cumin.
Just about two tablespoons of water
and again half teaspoon tomato paste to make it a bit colorful and tasty.
So here is my mixture ready
I am going to shape it to a balls.
it is smaller than walnuts.
I am going to rest my kofta balls in refrigerator.
Meanwhile we can prepare the eggplant
I have tree long eggplants i am going to partially peel them.
When you buy your eggplants try to choose the same sizes in diameter and the length so you can arrange them better easily.
So i am going to cut them in tree. f your eggplants are smaller you can cut them in two.
And every piece i am cutting them again in half and than three piece again.
Make sure you have plenty of vegetable oil to deep fry.
And also make sure it is hot when you begin to cook.
Fry them until you have golden color and soft
It doesn't have to be really hundred percent cook because we will continue to cook in the oven.
Since eggplants are tend to soak some of the oil it is better you use paper towel.
I have non stick baking pan round. It is 30cm. I am beginning to arrange my eggplants. Meanwhile in another pan i begin to cook my kofta balls. And also continue to cook eggplants.
Let me give you another option you can make; It would be really delicious you can arrange with mix of eggplants potatoes and and zucchinis.
Here are the kofte balls coming to the middle.
After the eggplant in the same oil i fried some green peppers that i cut in four or two pieces.
So i am almost done only one more thing we have to do is tomato sauce. I have ready from the summer time that i made. I am going to fry them a bit in the same oil that i cooked my meat balls. If you are using fresh tomatoes just grate about three four big size ripen tomatoes and then cook them is the oil.
After i cook the tomatoes i added about 1 cup of hot water. It is optional you can also add some couple of garlics. It would be taste good also.
And pour over the vegetables. Even looking it from the screen it says that "I am gonna be very delicious" Don't you think?
So i cooked my eggplant kofta kebab in preheated 180 C degree oven about 25 to 30 minutes or until the tomato sauce is bubbling and the vegetables and meat balls are soft.
