TURKISH BULGUR PILAF WITH TOMATOES - 'Pub Style Pilaf' Recipe

In this episode, I'd like to share with you my 'Domatesli Bulgur Pilaf' recipe. It is also known as Meyhane Pilavi, (Pub Style Pilaf) It is easy to make, so delicious and healthy. We love it! Plus, bulgur has a low glycemic index and low GI foods provide natural, slowly released energy. You can also cook this dish with rice, couscous or quinoa instead of bulgur, if desired.

INGREDIENTS

2 cups coarse bulgur
1 large onion
2 sweet green peppers
8 medium tomatoes
1 tbsp tomato paste
A pinch of granulated sugar
Red sweet paprika
Olive oil
3 tbsp butter
Salt & pepper

DIRECTIONS

Chop the onion and green peppers.
Heat 2-3 tbsp olive oil in a pan and add chopped veggies.
Sprinkle a pinch of salt and pepper.
Sautee over medium-low heat until tender for about 7-8 minutes, stirring occasionally.
Meanwhile, rinse the bulgur.
Pour 3 tbsp butter in a bowl and set aside.
Rinse the tomatoes, remove the stems and cut out the bad spots, then chop coarsely.
Pure in a blender or a food processor until smooth.
Do not forget to stir the veggies :)
Then measure the puree, you need 4 cups of tomato puree.
Complete with drinkable bottle water, if needed. I added 1/2 cup water.
Add 1 tbsp tomato paste, a pinch of sugar, black pepper to taste, 1 tsp or to taste salt and sweet red paprika, you can also add hot paprika if desired, then beat well.
When the veggies are tender, add bulgur and mix.
Add butter and sautee until then butter melts, stirring constantly.
Pour the tomato puree and mix well.
Gently flatten the surface then cover and cook for 18-20 minutes over medium-low heat.
Turn off the heat, cover with paper towels then the lid and let rest for 15 minutes.
Stir gently and serve hot.
