1 1/2 pounds waxy potatoes, unpeeled and very thinly sliced
8 large eggs, beaten to blend
1 pint cherry tomatoes
6 cloves garlic, skin-on
1/2 cup raw almonds
1 to 2 tablespoons sherry or red wine vinegar
1 to 2 tablespoons pimentón (smoked Spanish paprika), to taste
