This recipe is made with crisp and delicious potato patties stuffed with seasonal fresh toovar dana (fresh pigeon peas) and spices which indeed make for a wonderful treat!TOOVAR DANA PATTICEIngredients1 cup fresh pigeon peas (toovar dana), boiled1 tbsp oil1 tsp finely chopped ginger2 green chillies, finely chopped¼ tsp turmeric powder½ tsp garam masala powderSalt to taste3 medium potatoes, boiled, peeled and mashed1 tsp ginger-green chilli paste½ cup bread crumbsOil for deep fryingCorn flour for dustingTomato ketchup to serveMethod1. Put the boiled fresh pigeon peas in a chopped and coarsely chop it.2. Heat oil in a non-stick pan. Add ginger and green chillies and sauté for 30 seconds.3. Add the chopped fresh pigeon peas and sauté for a minute. Add turmeric powder, garam masala powder and salt and mix well. Cook for 1-2 minutes. Transfer in a bowl and allow to cool completely. 4. To make the potato mixture, take boiled potato in a large bowl. Add ginger-green chilli paste, salt, and bread crumbs and mix well. 5. To make the pattice, take a portion of the potato mixture and shape it into a ball. Make a cavity in the centre and generously stuff it with a portion of the fresh pigeon peas mixture. Bring the sides to the centre and shape it into a ball. This is a pattice.6. Heat sufficient oil in a kadai.7. Spread corn flour in a large bowl. Roll each pattice with it and dust off the excess flour.8. Gently slide the pattice a few at a time into the hot oil and deep fry till golden brown and crisp. 9. Arrange the pattice on a serving plate and serve hot with tomato ketchup.
