Tomato Sauce Fried Rice with Egg (蕃茄酱炒饭) | The Chinese Cuisine

This colorful combo is delicious and simple to cook!

INGREDIENTS:
- 500g cooked white rice
- 2 stalks green onions
- 2 eggs
- 1 stalk celery
- 114g tomato sauce (not paste) (1/2 can)
- 1/2 tsp. salt (2g)
- 1/4 cup olive oil (53g)
- 1 clove garlic
- 1/2 tbsp. water

DIRECTIONS:
1. prep your ingredients by dicing the celery, chopping the green onions, mincing the garlic, and whisking the two eggs (and adding a bit of water to the eggs)
2. add a little over half of the olive oil into a pan on high heat
3. cook the eggs in the oil
4. add in green onions and celery
5. take everything out, and pour in the rest of the oil. turn the heat down to medium
6. add in garlic, followed by the tomato paste
7. stir fry for a minute until the paste thickens slightly
8. add in cooked rice
9. stir fry the rice until the grains are evenly coated in tomato paste
10. add in the cooked eggs and veg
11. add in salt
12. stir fry for approximately 2 more minutes
13. serve and enjoy!
