This is how Ayam Bali is cooked it is the signature dish of Indonesian restaurant Pagi Sore.
It is a Balinese-inspired dish where chicken is barbecued after being cooked with a variety of spices and kecap manis (sweet sauce). The dish was invented by Pagi Sore founder Liyana Kwan, 62 (2021) in 1989.
FnB businesses especially in the town areas of Singapore are not doing well during this round of lockdowns and one of them is Pagi Sore which is located along Telok Ayer Street.
It is one of two businesses still operating along the street, the rest have either closed or shut for good, so I'm just doing this video to help them out a bit.
A big thanks to Chef Park Tan for showing me the behind the scenes of how they cook their signature dish.
