A very simple soup that relies on very simple ingredients: Beans and Bacon.Ingredients:250g bacon, chopped1 onion, diced250 mL (1 cup) diced celery250 mL (1 cup) diced carrot2-3 cloves garlic, minced5 mL (1 tsp) dried oreganosalt and pepper10 mL (2 tsp) dried chipotle pepper750 mL (3 cups) broth375 mL (1 1/2 cups) stewed tomatoes 2 - 540 mL cans beans, drained and rinsed Method:In Dutch oven or soup pot, cook bacon over until fat is rendered and bacon is crisp. Add onion, celery, carrot, and garlic; cook until onion is softened.
