The Bong Kitchen- Kheer-er-Goja| Chef Ananya Banerjee

Try this delicious Kheer-er-Goja recipe from my #BongKitchen to satisfy your sweet cravings! 'Goja' is a very popular form of fried sweet from Bengal. This can be made with mawa or paneer, and is very easy to make in your kitchen.
Chef tip: Do not soak fried goja in the sugar syrup for too long, as they can turn soggy.

Ingredients:
• ½ cup Maida
• 1 cup Sugar
• ½ cup Mawa
• ½ tsp Baking Powder
• ¼ tsp Cardamom Powder
• 1 Lime slice
• 2 tbsp Ghee
• Oil to deep fry

Method:
1. In a bowl rub the ghee and maida then add mawa, baking powder, cardamom powder and mix well. Add little water to make a dough. Rest the dough for 15 minutes.
2. Roll out the dough cut it into 2 parts, place one portion on the other and pat it again into a disc. Repeat this process 4 times.
3. Cut it into squares and deep fry on very slow heat till golden brown and cooked from inside.
4. Prepare a sugar syrup with sugar and water till the consistency is one thread add the lime slice (Lime will prevent the sugar from crystallization)
5. Add fried gojas to the sugar syrup and let them soak in for 30 minutes.
