This chicken and cheese combo just got better.INGREDIENTS:1/3 cup minced red onion3 cloves garlic, minced3/4 cup crushed tomatoes1/4 cup sherry vinegar1 pinch white pepper1 tsp smoked paprika2 tsp white sugar1 tsp garlic powder1/2 tsp salt2 cups of cooked quinoa2 x 150 grams pieces of chicken breastsalt and white pepper to seasonOlive oilMozzarella cheeseParmesan cheese (optional)Fresh parsleyChili flakesSTEPS:1.) Fry off the garlic and onions in some oil in a medium hot pan for 2 mins.2.) Add in all the other sauce ingredients and simmer for 10 mins.3.) Flatten your chicken breast, season with salt and white pepper. 4.)Coat with quinoa.5.) Shallow fry at a low to medium heat in at least 1/2 inch of oil for about 5 mins per side, until the chicken is cooked through.6.) When your chicken is done, cover in parmesan and mozzarella. Put the on to let the cheese melt.7.) Garnish with parsley and chili flakes.
