Strawberry Douhua
Servings: 4

INGREDIENTS
2 tablespoons water
5 grams galatin
500 milliliters soy milk
2 tablespoons sugar, divided
150 grams chopped strawberries, plus more, sliced, for serving
1 teaspoon lemon juice

PREPARATION
In a small bowl, combine the water and gelatin and mix well. Set aside.
In a small pan, bring the soy milk to a boil over medium heat. Once boiling, remove from the heat and add the gelatin mixture and 1 tablespoon of sugar. Mix well.
Pour the soy milk mixture into a 6-inch square dish and chill in the refrigerator for at least 3 hours, until set.
In a medium microwave-safe bowl, combine the strawberries, remaining tablespoon of sugar, and the lemon juice. Microwave at 600W for 2 minutes, then stir and microwave again for another minute. Let cool.
Scoop the douhua with a spoon into serving glasses. Top with the strawberry mixture and garnish with fresh strawberries.
