Breakfast, lunch and dinner SORTED with these quick maize meal recipe ideas

Breakfast Egg & Bacon Pap Cups

Ingredients:

For the stiff pap:

2 cups water
1 cup White Star Quick Maize Meal
1 tbsp butter
Salt, to taste
1 cup grated mozzarella cheese

For the egg mixture:

1-2 cups crispy bacon bits
6 eggs
1/3 cup milk
Salt & pepper, to taste
cup grated cheese

Servings: 12 14 breakfast cups

Recipe:

1. Preheat the oven to 180C.

2. Grease a muffin tin well.

For the stiff pap:

1. Bring 1 cups water to the boil in a medium pot. Mix the remaining 1 cup of water with 1 cup of White Star Quick Maize Meal to form a paste. Gradually add the maize meal paste while stirring, using a whisk. Cover with a lid. Bring to the boil and cook on medium heat for 4 5 minutes.

2. Remove from the heat and add the butter, cheese, salt & pepper. Stir until melted and combined. Allow to cool slightly.

3. Press a tablespoon or two of the cooked maize meal into each muffin hole (filling approximately half way).

For the egg mixture:

1. Whisk together the eggs, milk & seasoning. Add the crispy bacon to the egg mixture, reserving a 1/3rd to sprinkle over after baking. Pour the egg mixture over the maize meal layer in the muffin holes. Sprinkle a little cheese over each and bake for 20 - 25 minutes until the muffins are set & golden.

2. Sprinkle with the reserved crispy bacon.

3. Serve while warm and ENJOY!!

Lunch - Upside Down Pap & Wors

Ingredients:

For the stiff pap:

2 cups water
1 cup White Star Quick Maize Meal
1 tbsp butter
Salt to taste
1 cup grated mozzarella cheese

For the bowls:

2 tbsp oil, of choice
200 g boerewors, cooked
onion, chopped
1 garlic clove, crushed
1 tin chopped tomatoes
2 tsp chutney
2 tsp butter
2 eggs, room temperature
Salt & Pepper, to taste
Fresh herbs, to garnish

Servings: 2 portions

For the stiff pap:

1. Bring 1 cups water to the boil in a medium pot. Mix the remaining 1 cup of water with 1 cup of White Star Quick Maize Meal to form a paste. Gradually add the maize meal paste while stirring, using a whisk. Cover with a lid. Bring to the boil and cook on medium heat for 4 5 minutes.

2. Remove from the heat and add the butter, cheese, salt & pepper. Stir until melted and combined. Keep warm.

For the bowls:

1. Slice your cooked boerewors into thin slices.

2. Saut the onion & garlic in oil for 5 minutes. Add the tinned tomatoes & chutney and simmer down until thickened, 10 15 minutes. Season to taste.

3. Fill two greased bowls with cooked maize meal, half way. Press firmly to create the bowl shape.

4. Add a layer of cooked sliced boerewors. Fill the bowls to the top with another layer of cooked maize meal. Carefully, un-mould the bowls onto plates to reveal a dome shape.

5. Generously, spoon over the thickened tomato relish and top each tower with a fried egg.

6. Season to taste.

7. Garnish with fresh herbs. Serve warm & ENJOY!!

Dinner SA Style Pap Pizza

Ingredients:

For the stiff pap:

2 cups water
1 cup White Star Quick Maize Meal
15 ml butter
Salt & pepper, to taste
1 cup grated mozzarella cheese

For the toppings:

cup Tomato paste
2 cup cheddar cheese, grated
1 cup crispy bacon bits
1 cup mushrooms, fried
1 cup cherry tomatoes, halved
cup whole kernel corn, drained
Fresh basil to garnish

Recipe:

1. Preheat the oven to 200C.

For the stiff pap:

1. Bring 1 cups water to the boil in a medium pot. Mix the remaining 1 cup of water with 1 cup of White Star Quick Maize Meal to form a paste. Gradually add the maize meal paste while stirring, using a whisk. Cover with a lid. Bring to the boil and cook on medium heat for 4 5 minutes.

2. Remove from the heat and add the butter, cheese, salt & pepper. Stir until melted and combined. Allow to cool slightly, before rolling out between two sheets of baking paper, 1 cm thick, and lay onto a baking tray.

3. Remove only the top layer of baking paper.

For the toppings:

1. Spread the tomato paste onto the pap base and sprinkle with a generous layer of grated cheese.

2. Add the crispy bacon, mushrooms, cherry tomatoes and corn.

3. Bake in the oven for 15 - 20 minutes or until the crust is crispy.

4. Garnish with fresh basil

5. Slice and serve immediately and ENJOY!!
