Summer Hijiki Salad | Graces Japanese Cooking

Mineral rich, nutrient dense greens, and lots of fiber to keep you balanced and energized during the summer heat!

RECIPE (3-4 servings) although my husband and I can finish this in one seating;)

3 tbsp dried hijiki, submerge in water for 20 min.

8-10 red lettuce leave, cut into strips (use your favorite greens! Kale, romaine, and green lettuce leaves work well. Mix and match if you like)

1 cup green cabbage, shred
1 celery leaf, thinly sliced
1 Persian or Japanese cucumber, julienned
2-3 shiso leaves, thinly shredded

1. In a large bowl, combine red lettuce leaves, green cabbage, celery, cucumber, and shiso leaves.
2. Drain hijiki and add to the bowl.
3. Drizzle 1/3 - 1/2 cup of Grace's Japanes Style dressing (see video).
4. Toss until well combined and plate.
