Stuffed Aloo in Palak Gravy Palak Stuffed Aloo Palak with stuffed Aloo
We generally combine paneer with palak but in today’s recipe we try something different.
We combine palak (spinach ) gravy with our stuffed aloo.It is very tasty and healthy because we use palak, aloo ,paneerand corns.
As we all know palak is a rich source of vitamins and mionerals specially iron .It is very rich green leafy vegetable and in this recipe we combine potato (aloo)which is great source of carbohydrates and Cottage Cheese(Paneer) which is a good source of proteins specially for vegetarians .
So in this recipe we combine green leafy vegetable with carbohydrates and proteins
Try this healthy recipe

Ingredients:
Palak 250gms
Onion 3 medium sized (finely chopped)
Tomato 3 medium sized (paste)
Aloo (potato)
Cottage Cheese ¼ cup(grated)
Boiled Corns ¼ cup
Ginger Garlic paste 1tbsp
Salt
Red pepper powder
Turmeric powder
Garam masala
Mango powder
Chaat masala

Method:
Preparation of potato(aloo)
1. Heat the oil in a pan, add cumin seeds and then add onion(finely chopped) and saute it for 1 minute
2. Add salt,red pepper powder, turmeric powder, garam masal and chaat masal and mix them well and cook it for 1 minute.
3. Add boiled corns ,paneer(cottage cheese)and mix it wlle and cook it for qnother 1 minutew and turn off the flame and let it cool to room temperature.
4. Take potato and peel it and then hollow it from the centre to make cavity to fill the stuffing.
5. Fill the stuffing and palce it in microwave safe bowl and then grease the potatao with oil thoroughly.
6. Sprinkle some turmeric powder,red pepper powder,garam masala and chaat masala to enhance the taste and look
7. Add remaing stuffing over potato (if any) and then sprinkle some water over that then microwave it for 8-9 minutes.


Preparation of palak gravy:
1. Boil the spinach leaves (palak) .For this add spinach leaves in a pressure cooker and add salt and cook it upto 2 whistles .after 2 whistles ,turn off the flame and remove the steam so tat colour of Spinach leaves doesn’t get change.
2. Open the lid of the presure cooker and grind the boiled palak in a grinder to make puree of this.
3. Heat the oil in a pan add cumin seeds, ginger garlic paste and add chopped onions and saute it till golden brown .
4. Add tomato paste and cook it till it leaves the oil from sides.
5. Add red pepper powder, garam masala and mango powder(optional).
6. Cook them for 1 minute and then add palak puree and add water to adjust the consistency.
7. Cook it for another 2 minutes and then turn off the flame
8. Assemble palak gravy and potato.
9. Our stuffed aloo in palak gravy is ready to serve.
