Serves 4-5
Recipe in English:

Ingredients:
-Water 1 & litre
-Lehsan (Garlic) crushed 1 tbs
-Adrak (Ginger) crushed 1 tbs
-Bakray ka maghaz (Mutton brain) 1 piece (100g) washed & deveined
-Dil (Mutton heart) 1 piece (100g) washed & cleaned
-Gurday (Mutton kidneys) 10 pieces (350g) washed & cleaned
-Tamatar (Tomatoes) 4 medium
-Hari mirch (Green chillies) 4-5
-Lal mirch powder (Red chilli powder) tsp or to taste
-Kali mirch powder (Black pepper powder) 1 tsp
-Zeera powder (Cumin powder) tsp
-Dhania powder (Coriander powder) tsp
-Garam masala powder tsp
-Cooking oil 3-4 tbs
-Namak (Salt) 1 tsp or to taste
-Dahi (Yogurt) whisked Cup
-Makhan (Butter) cubes 100g
-Kasuri methi (Dried fenugreek leaves) 1 & tsp
-Hari mirch (Green chilli) sliced 1-2
-Hara dhania (Fresh coriander) chopped
-Adrak (Ginger) julienne
-Hara dhania (Fresh coriander) chopped
-Adrak (Ginger) julienne
-Pyaz (Onion) rings

Directions:
-In water,add garlic,ginger & mix well.
-In a wok,add approx. 1 litre of ginger garlic water & reserve remaining water for later use (approx. 500ml) & bring it to boil.
-Add mutton brain,mutton heart,mutton kidneys and mix well,cover & cook on medium flame for 5-6 minutes then strain & set aside.
-Heat griddle,add reserved cup of ginger garlic water & bring it to boil.
-Add boiled mutton organs,chop into small pieces with the help of katakat meat cleaver and cook for 8-10 minutes.
-Again add reserved cup of ginger garlic water,add tomatoes (cut into two halves),green chillies,cover & cook on low flame for 6-7 minutes.
-Remove tomato skin,chop tomatoes & green chillies with the help of katakat meat cleaver,mix everything altogether,chop constantly and cook for 4-5 minutes.
-Add remaining ginger garlic water,red chilli powder,black pepper powder,cumin powder,coriander powder,garam masala powder and mix well,cook & chop continuously for 4-5 minutes.
-Add cooking oil & mix well.
-Add salt,yogurt,mix well & cook for 2-3 minutes.
-Add butter,mix & chop until butter melts.
-Add dried fenugreek leaves,green chilli,fresh coriander & ginger.
-Garnish with fresh coriander,ginger,onion rings & serve!

Tarkeeb:
-Pani mein lehsan aur adrak dal ker ache tarhan mix ker lein.
-Karahi mein approx. 1 litre adrak lehsan ka pani dal dein aur baqi ko bad mein use kernay kliya side per rakh dein (approx. 500ml) aur ubal anay dein.
-Bakray ka maghaz,dil aur gurday dal ker ache tarhan mix karein aur dhak ker darmiyani ancch per 5-6 minutes kliya paka lein phir strain ker ka side per rakh dein.
-Tawa garam karein aur reserved cup adrak lehsan ka pani dal dein aur ubal anay dein.
-Boiled mutton organs dal dein aur katakat meat cleaver ki madad sa small pieces mein chop ker lein aur 8-10 minutes kliya paka lein.
-Dubara reserved cup adrak leshan ka pani dal dein,tamatar dal dein (do hisson mein cut ker lein) aur hari mirchein dal ker dhak dein aur halki ancch per 6-7 minutes kliya paka lein.
-Tamatar ki skin ko nikal lein,tamatar aur hari mirchon ko katakat meat cleaver ki madad sa constantly chop ker lein aur 4-5 minutes klilya paka lein.
-Remaining adrak lehsan ka pani,lal mirch powder,kali mirch powder,zeera powder,dhania powder aur garam masala powder dal ker ache tarhan mix karein aur 4-5 minutes kliya musalsal chop ker ka paka lein.
-Cooking oil dal ker ache tarhan mix ker lein.
-Namak aur dahi dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
-Makhan dal dein aur melt hunay tak ache tarhan mix aur chop ker lein.
-Kasuri methi,hari mirch,hara dhania aur adrak dal dein.
-Hara dhania,adrak aur pyaz rings as garnish ker ka serve karein!
