Today, we are making Chao Zhou Hao Lao (). Chao Zhou is a city in Guangdong providence. It is known for its abundance of street food. Hao Lao means oyster pancake, which is the simplest and the most popular local street food. Dont be put off because there are oysters in it. Trust me, once youve tried it, you will be surprised how good it is.

INGREDIENTS
10 oz of shucked oyster

1 tbsp of cooking oil to clean the oyster
3 scallions diced
10 tbsp of sweet potato starch (Amazon Link - https://geni.us/ItSq)
6.5 tbsp of water
1 tbsp + 1 tsp of fish sauce (Amazon Link - https://geni.us/uOicJ)
3 tbsp of pork lard
2 eggs
Cilantro as garnish

INSTRUCTIONS

In a big mixing bowl, add 10 oz of shucked and well-drained oysters, 3 tbsp of cornstarch, 2 tbsp of cooking wine, and 1 tbsp of cooking oil. Gently rub it. The starch will help to absorb the impurities.
Rinse the oysters with cold water several times to remove the starch. Once the water becomes clear, drain it completely. and set it aside.
In a separate bowl, add 10 tbsp of sweet potato starch, 6.5 tbsp of water, 1 tbsp + 1 tsp of fish sauce, 1/3 cup of diced scallion. . Whisk until no clumps. Then add the oyster. Gently mix in. If you are not a fan of oysters, you can use shrimp or fish meat instead.
Heat up your wok, add 3 tbsp of pork lard. Stir the oyster batter before adding it to the wok. Quickly crack 2 eggs and whisk them really well. Pour the egg into the wok.
Keep the heat on high. Give it 20 seconds for the egg to set. When you see a little bit of brown color from the edge, you can start cutting the pancake into 4 parts. Flip them over to fry the other side. Once both sides are golden brown. You are done. Sprinkle some white pepper by taste. Top some cilantro as garnish. Serve with sriracha and fish sauce.
