Stir Fried Veggies | Sanjeev Kapoor Khazana

Fresh cut vegetables stir fried with mild sauces to make this super healthy recipe.

STIR FRIED VEGGIES

Ingredients

1½ cups roughly chopped button mushrooms
1 cup mixed bell pepper triangles
1 tablespoon oil
1 tablespoon chopped garlic
1 tablespoon light soy sauce
1 tablespoon oyster sauce
Salt to taste
Crushed black peppercorns to taste
½ cup bean sprouts
4-5 stalks spring onion greens, chopped
1 teaspoon vinegar

Method

1. Heat oil in anon-stick wok. Add garlic and sauté well.
2. Add mushrooms, mix and sauté for a minute. Add pepper, mix and stir-fry for a minute.
3. Add soy sauce, oyster sauce, salt, crushed peppercorns, mix well and cook for 2 minutes.
4. Add bean sprouts and mix well. Reserve some spring onion greens and add remaining, mix well.
5. Switch off heat, add vinegar and mix well.
6. Serve hot garnished with spring onion greens.

Preparation Time: 15-20 minutes
Cooking Time: 8-10 minutes
