Ingredients:

270 gm (1 1/2 cups) brown basmati rice
750 ml (3 cups) water
3 tbsp oil
1 tsp asafetida or hing
1 tbsp ginger, freshly grated
½ cup freshly ground black pepper, to taste
40 gm (1/4 cup) almonds, slivered or sliced
2 bell peppers or capsicum*, chopped
150 gm (1 cup) green peas
250 gm (1 cup) paneer, cubed
1 ½ tsp salt
freshly ground black pepper, to taste
*Use red and yellow bell peppers for a colourful version

Method:

- Wash the rice well and place it in a bowl with enough water to cover it for 30 minutes. Discard the water and cook with 750 ml (3 cups) of water in an electric rice cooker, pressure cooker or in a pot with a well fitting lid. The cooking time varies for each method.

- In a wok, put in 3 tbsp oil and after it is hot, stir in the yellow asafoetida, ginger and freshly ground pepper. Put in the slivered almonds and stir fry until the almonds are lightly golden brown in colour. Next, mix in the bell peppers, and the peas. Cover and cook till done.

- Stir in the rice and salt and mix well. Fold in the cubed paneer pieces. And the delicious stir fried brown rice with bell peppers, peas, cottage cheese and almonds is all ready to be served.
