SQUID ROAST || കണവ റോസ്റ്റ് || കൂന്തൾ റോസ്റ്റ്
Ingredients
-------------------
Squid - 1kg(approx.700-800gm after cleaning)
Shallots-15(sliced)
Onion-1(large)
Ginger-3inch piece(crushed)
Garlic small-15(crushed)
Green chilly-4(slitted)
Curry leaves-few
Turmeric pwd-1/4-1/2tsp
Coriander powder -2tsp
Kashmiri chilly powder- 1-
2tsp
Garam masala-1/2tsp
Black pepper powder-1/2-1tsp
Tomato - 1(small)chopped
Salt - to taste
Fennel seeds- 1+1tsp
Chilly flakes - 1tsp
Mustard seeds- 1tsp
Coconut-1/4 cup

Method
--------------
•Heat a pan and 2tbs of coconut oil
•Splutter 1tsp of fennel seeds, curry leaves and slitted green chillies
•Add the crushed ginger and garlic and saute till light brown in medium flame
•Add the sliced onion and saute, add little salt snd turmeric powder, saute till soft
•Add the sliced shallots and saute until translucent
•Add coriander powder and stir well, add kshmiri chilly powder and saute well untill the raw smell goes
•Add the chopped tomato and fry till it gets mashed
•Add the squid and mix well with the masala
•Cover the pan and cook the squid in low to medium flame for 2-3min, no need to add water, After 3 min open the lid and add black pepper and garam masala and give good mix and add 1tbs coconut oil, cover and cook for another 3-4 mins
•check the seasonings
*Add the spices and salt according to your taste
•After 4min turn off the flame
•Heat another pan and add 1tbs of coconut oil
•splutter mustard seeds and add dry chilly, chilly flakes, curry leaves, grated coconut and crushed fennel seed(1tsp), fry till golden brown and add it to the roasted squid, which gives the dish an intense flavour
•squid roast is ready
*Do not overcook the squid as it turns rubbery.
