Spinach Ohitashi (Boiled Spinach Salad)

Anyone else watch Popeye the Sailor Man and wonder why he ate(well I guess he drank it straight out of the can) so much spinach? Its because spinach is the all mighty leafy green that is full of nutrients to keep us strong and healthy! AND spinach is a winter vegetable which means it is at its peak in nutrient value RIGHT NOW!

Ohitashi is a simple and delicious way to get a good amount of leafy green veggies into your daily meals. Top it with bonito flakes, ground sesame seeds, or nori! I hope you enjoy!

Recipe(serves 2)

1 bunch organic spinach*
2 tablespoons sea salt
bonito flakes as topping
soy sauce as sauce

*always buy spinach organic. It is listed as one of the most sprayed (with chemicals) vegetables under the EWG's Dirty Dozen list. (go to ewg.org for more info)

1. Wash spinach thoroughly to remove any dirt. I recommend soaking the spinach in water for a few minutes to make sure any leftover dirt is removed.
2. Boil water. Add salt.
3. Parboil spinach until just wilted. Approximately 1 minute. Turn off heat.
4. Transfer to the ice bath right away.
5. Once its chilled, squeeze out water.
6. Cut into approximately 1 inch equal portions. It doesnt have to be exact.
7. Squeeze out excess water and plate.
8. Top with bonito flakes and drizzle some soy sauce.
9. Enjoy!!
