SPICY IDLI WEDGES

Ingredients

6-8 idlis
½ cup corn starch
1 tbsp chopped fresh parsley leaves
Salt to taste
Oil for frying
Spice Mix
2 tsps onion powder
1 tbsp red chilli powder
½ tsp crushed black peppercorns
2 tsps garlic powder
1 tsp mixed dried herbs
Salt to taste
To serve
Tomato ketchup
Mustard paste

Method

1. To make the spice mix, put onion powder in a mortar. Add chilli powder, crushed black peppercorns, garlic powder, mixed dried herbs and salt and crush well with a pestle.
2. Cut the idlis into wedges.
3. Take corn flour in a bowl, add parsley, salt and ½ cup water. Add the idlis and mix well.
4. Heat sufficient oil in a kadai. Slide in the idli wedges into the hot oil and deep fry till golden brown and crisp. Drain on an absorbent paper and transfer it in a bowl.
5. Sprinkle the prepared spice mix on top and toss well.
6. Serve hot with tomato ketchup and mustard paste.
