Spanish Cooking Techniques: Lactic fermentation

Fermentation is a culinary technique used to preserve food for long periods of time and to sometimes improve their nutritional profile. This technique basically consists of depriving the product of oxygen so that fermentation occurs.

In the video, we show you how to prepare 3 types of food using this technique:
Fermented tomatoes
Fermented peas
Fermented onions

What do we need to ferment these foods?

200 g cherry tomatoes
Salt
200 g peas
200 g mini onion
And, most importantly, a vacuum bag, without which this technique is more complicated

Start by placing the ingredients separately in the vacuum bags and adding a little salt. Put each bag in the vacuum sealer machine and leave it to ferment for 2 or 3 weeks.

After this period, your foods are fermented and they can be served as appetizers or to accompany other dishes.
