Soup for soba noodle (Soba tsuyu/Men-tsuyu) Japanese veggie recipe YUCa's Japanese Cooking

In this video, I will introduce how to make the soup for soba noodle. We call this "Soba-tsuyu" or "Men-tsuyu". You can use this soup for Udon and somen as well. It's always nice to have this homemade soup in the fridge. Please try it out!

How to make Soup for soba noodle (Soba tsuyu/Men-tsuyu)

Ingredients:
300ml Dashi soup stock
5 Tbsp (75ml) Soy sauce
5 Tbsp (75ml) Mirin
1 Tbsp (15ml) Sugar
1 tsp (5ml) Sake
Handful of Bonito flakes

Directions:
1. Mix all the ingredients in a pot.
2. Warm the pot until it starts to simmer.
3. Add a handful of bonito flakes and bring to a boil.
4. Turn off the heat just after boiling.
5. Strain the soup. Done!
