Smokey Tandoori Chicken
Serves 3
Recipe in English:

Ingredients:
-Chicken quarter pieces 4-5 (approx. 1 kg)
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Garam masala powder tsp
-Haldi powder (Turmeric powder) tsp
-Kashmiri lal mirch powder (Kashmiri red chilli powder) 1 tsp
-Namak (Salt) 2 tsp or to taste
-Dhania powder (Coriander powder) 1 tsp
-Dahi (Yogurt) thick 3-4 tbs
-Mustard paste 1 tbs
-Adrak (Ginger) crushed 1 tbs
-Lehsan (Garlic) crushed 1 & tbs
-Hara dhania (Fresh coriander) chopped 1 tbs
-Lemon juice 3 tbs
-Tandoori masala 1 tbs
-Cooking oil 2-3 tbs
-Charcoal for smoke
Prepare Salad:
-Pyaz (Onion) 1 medium
-Gajar (Carrot) 1 medium
-Kheera (Cucumber) 1
-Mooli (Radish) 1 medium
-Tamatar (Tomato) 1 medium
-Hari mirch (Green chilli) 2
-Salad patta (Lettuce leaves) 2
-Namak (Salt) to taste
-Lemon juice 1 & tbs
-Tamarind sauce

Directions:
-Make cuts on both sides of chicken pieces with the help of knife & set aside.
-In a bowl,add red chilli powder,cumin seeds,garam masala powder,turmeric powder,kashmiri red chilli powder,salt,coriander powder,yogurt,mustard paste,ginger,garlic,fresh coriander,lemon juice,tandoori masala & whisk well.
-Add chicken tikka pieces and mix well,cover & marinate for 4 hours or overnight in refrigerator.
-In a wok,add cooking oil,marinated chicken & apply remaining marinade on chicken pieces,cover & cook on low flame for 12-15 minutes then cook on medium flame until water is reduced (approx. 5 minutes) then turn the sides & again cook on low flame for 10-12 minutes.
-Give a coal smoke for 2-3 minutes.
Prepare Salad:
-Cut & slice onion,carrot,cucumber,radish,tomato,green chillies,lettuce leaves then chop them coarsely.
-Transfer them in a bowl,add salt,lemon juice & mix well.
-Serve smoky tandoori chicken with tamarind sauce & salad.

Ajza:

-Tamatar (Tomato) 1 medium
-Hari mirch (Green chilli) 2
-Salad patta (Lettuce leaves) 2
-Namak (Salt) to taste
-Lemon juice 1 & tbs
-Tamarind sauce

Directions:
-Chicken pieces per knife ki madad sa dono sides per cuts laga lein & side per rakh dein.
-Bowl mein lal mirch powder,zeera,garam masala powder,haldi powder,Kashmiri lal mirch powder, namak,dhania powder,dahi,mustard paste,adrak,lehsan,hara dhania,lemon juice aur tandoori masala dal ker ache tarhan whisk ker lein.
-Chicken tikka pieces dal ker ache tarhan mix karein aur dhak ker 4 hours ya overnight k liye refrigerator mein marinate ker lein.
-Karahi mein cooking oil aur marinated chicken dal dein aur remaining marinade ko chicken pieces per laga lein aur dhak ker halki ancch per 12-15 minutes kliya paka lein phir darmiyani ancch per pani reduce ho janay tak paka lein (approx. 5 minutes) phir sides ko turn ker lein aur halki ancch per 10-12 minutes kliya paka lein.
-2-3 minutes kliya koyla ka dhuwan dein.
Prepare Salad:
-Pyaz,gajar,kheera,mooli,tamatar,hari mirch aur salad patta ko cut ker lein phir coarsely chop ker lein.
-Bowl mein dal dein,namak aur lemon juice dal ker ache tarhan mix ker lein.
-Smoky tandoori chicken ko salad or imli k sauce k sath serve karein.
