Sitaphal Phirni | Sanjeev Kapoor Khazana

This delicious creamy phirni is made using fresh custard apple.

SITAPHAL PHIRNI

Ingredients

½ cup custard apple (sitaphal) pulp + for topping
1 litre milk
5-7 tablespoons rice, soaked for 5-6 hours
½ cup sugar
1 teaspoon green cardamom powder
5-7 almonds, soaked, skinned and sliced
¼ cup chopped mixed almonds and pistachios

Method

1. Drain the rice and grind into a smooth paste with water as required.
2. Heat milk in a non-stick pan and bring to boil. Add rice paste, mix and cook for 5-7 minutes or till thick.
3. Add sugar, mix and cook till mixture reduces. Add custard apple pulp, cardamom powder and almond slices, mix and cook for 5 minutes.
4. Put some phirni in a serving bowl, top with some custard apple pulp and mixed nuts. Refrigerate for 2-3 hours.
5. Serve chilled.

Preparation Time: 5-6 hours
Cooking Time: 10-15 minutes
