Nestled at the quaint Carpmael Road in Joo Chiat, British Hainan is the brainchild of Mr Frederick Puah as his retirement plan. His father learnt the colonial-inspired Hainanese cuisines while working as a cook for British household. Together with his family, Uncle Fred offered his father's classic signature dishes, including oxtail soup, pork chop and curry rice that the restaurant is known for. The oxtail soup is mind-blowing! Coated with thick, rich stew that is cooked over at least 5 hours, the oxtail is so soft and tender that the meat just falls off the bones. The secret lies with the use of sweet potatoes to thicken the gravy instead of starch. The Hainanese curry rice is a combo consisting of crispy pork chop, well braised pork, chap chye, doused with thick curry. Uncle Fred loves collecting vintage antiques. So while enjoying their meal, customers can take a stroll down the memory lane in the little museum. If you are lucky, you might be able to get Uncle Fred to sing his favourite songs.
