Shiitake Mushroom Tacos

TACOS, TACOS, WHO 's tacos!!! I do and this is one of my favorites to make at home. A yummy plant based taco:) Its easy, delish and healthy. I usually have dried shiitake stocked in my pantry but fresh ones are just as good. I still love my crispy chicken tacos, but when I want something lighter this is my go to:) I hope you enjoy!


Recipe: 2-3 tacos

Your choice of tortilla
4 dried or fresh shiitake mushrooms, thinly sliced
1/2 onion, thinly sliced
4 romaine lettuce leaves, chopped
1/2 avocado
salt and freshly ground pepper
extra virgin olive oil for sauting

Sauce:
1 teaspoon ginger, grated
1 garlic clove, grated
1 teaspoon soy sauce
1 teaspoon maple syrup
1/2 rice vinegar

1. If using dried shiitake mushrooms, rehydrate in warm water for 45 minutes. Drain, squeeze out excess water, remove stem, and thinly slice.
2. Prepare onion, romaine lettuce, and avocado.
3. Combine sauce ingredients in a small bowl.
4. In a small frying pan make the mushroom mixture. Heat pan to medium and add oil. Add onion, salt, and pepper. Saut until translucent and slightly brown. Add shiitake. Stir fry for a few minutes. Add sauce, stir-fry and set aside.
5. Heat tortillas if you like. Add mushroom mixture, avocado, lettuce, and your choice of hot sauce or salsa.
6. Feel free to add your own toppings! Enjoy!
