2 pounds -- pork belly (slice 2"x 2" & tied around)
3 pcs ------ Shanghai baby bok choy
** for blanching **
5 slices ---- ginger
5 stalks ---- green onion
7 cups ----- water
1 cup ------ Shaoxing rice wine
** for spice to be bagged **
3 pcs ------- each, star anise, bay leaves, cardamon
1 tsp ------- Szechwan green peppercorn
1 pc ------- cinnamon bark (about little finger size)
1 tsp ------- dried cloves
3 pcs ------- dried Chinese licorice root
1 pc -------- dried citrus peel (about 2" x 2" size)

2 Tbsp ----- cooking oil
2 Tbsp ----- crystal rock white sugar
2 cups ----- Shaoxing rice wine
1/4 cup ---- light soy sauce
3 to 5 cups -- water (or enough to cover meat)
5 slices ------- ginger
