Shanghai Oxtail Noodle Soup | HAPPY WOK

Oxtail cut is so expensive but no wonder it gonna be tasty a cooking. Here is one cooking that you might like. Made into delicious noodle soup. You may use pressure cooker to shorten cooking time to tenderized oxtail meat. ( so meat will separate from the bone, by itself ) Enjoy.

2 pounds ---- oxtail (blanch for 3 mins before using)
8 cups -------- water (add extra cup if needed)
4 slices ------ ginger (large slices)
2 pcs --------- star anise
15 pcs ------- Szechuan peppercorn
1/2 cup ------ rice wine
1 tsp ---------- salt

1 pound ------- Shanghai noodle
12 oz. ---------- watercress (or any green, leafy veggie)

add 1 tsp --- each, light soy sauce & sesame oil
dash ---------- white pepper
1/2 tsp ------ green onion (chopped)
