Set Dosa | Sanjeev Kapoor Khazana

One of the variety of dosas made in the south. The soft spongy texture and small size of it is what makes it different from the others.

SET DOSA

Ingredients

½ cup short grain rice, soaked and drained
⅓ cup parboiled rice, soaked and drained
½ cup split black gram (urad dal), soaked and drained
2 tablespoons thick pressed rice (poha), soaked in 4 tablespoons yogurt
1 teaspoon castor sugar
Salt to taste
Oil as required
1 medium onion

Method

1. Blend together short grain rice, parboiled rice, black gram and pressed rice with sufficient water to a smooth paste. Transfer in a bowl.
2. Add castor sugar and salt, mix well and set aside to ferment for 8-10 hours.
3. Heat a non-stick tawa and spread oil on it with an onion. Pour a ladleful of the fermented batter on it and spread into a disc. Cover and cook till evenly done from both sides, basting with oil.
4. Serve hot with sambhar and coconut chutney.
