Sesame Prawn Toast | Sanjeev Kapoor Khazana

Bread slices topped with freshly ground prawn mixture with sesame seeds, deep fried to perfection.

SESAME PRAWN TOAST

Ingredients

1½ cups medium prawns, peeled and deveined
White sesame seeds as required
8 white bread slices
1 stalk spring onion greens, roughly chopped
2-3 spring onion bulbs, cut into quarters
1 inch ginger, sliced
4-5 garlic cloves
1-2 fresh red chillies, chopped
1 tablespoon blended sesame oil
2 teaspoons soy sauce
1 egg
Salt to taste
1 tablespoon chopped fresh coriander leaves
Oil for deep-frying
Fresh coriander leaves for garnishing
Sweet-chilli sauce for serving

Method

1. Combine prawns, spring onion greens, spring onion bulbs, ginger, garlic cloves, red chillies, sesame oil, soy sauce and egg in a food processor and grind till the mixture turns smooth. Transfer in a bowl.
2. Add salt and coriander leaves and mix well.
3. Cut bread slices into roundels using a medium size cookie cutter.
4. Spread some white sesame seeds on a plate.
5. Spread some ground prawn mixture on one side of each bread roundel, coat the prawn side with sesame seeds and transfer on another plate.
6. Heat sufficient oil in a kadai. Put the prepared bread roundels and deep-fry till golden brown and crisp. Drain on absorbent paper.
7. Garnish with coriander leaves and serve hot with sweet-chilli sauce.
