Handi Seekh Kabab
Serves 4-5
Recipe in English:

Ingredients:
-Cooking oil 1-2 tbs
-Mon salwa Chicken seekh kabab 12 pieces
-Sabut dhania (Coriander seeds) 1 tbs
-Zeera (Cumin seeds) ½ tbs
-Sabut lal mirch (Button red chillies) 9-10
-Kaju (Cashew nuts) 9-10
-Pyaz (Onion) fried ½ Cup
-Cooking oil 3-4 tbs
-Makhan (Butter) 1 tbs
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Hari mirch (Green chilli) paste 1 tbs
-Tamatar (Tomatoes) grinded 2 medium
-Dahi (Yogurt) whisked ½ Cup (room temperature)
-Namak (Salt) ½ tsp or to taste
-Kali mirch powder (Black pepper powder) 1 tsp
-Garam masala powder 1 tsp
-Pani (Water) ½ Cup or as required
-Hara dhania (Fresh coriander) chopped 2 tbs
-Cream ½ Cup
-Adrak (Ginger) julienne
-Makhan (Butter)
-Hara dhania (Fresh coriander) chopped
-Hari mirch (Green chilli)

Directions:
-In frying pan,add cooking oil and fry chicken seekh kabab from all sides then cut into two halves & set aside.
-In frying pan,add coriander seeds,cumin seeds,button red chillies and dry roast until fragrant.
-Add cashew nuts and dry roast until light brown.
-Let it cool down.
-In spice mixer,add roasted spices and grind well.
-Add fried onion and grind again & set aside.
-In pot,add cooking oil,butter and let it melt.
-Add ginger garlic paste,green chilli paste and mix well.
-Add grinded tomatoes and mix well.
-Now add ground spices & onion,mix well and cook until oil separates.
-Turn off the flame,add yogurt and mix well.
-Turn on the flame,add salt,black pepper powder,garam masala powder and mix well.
-Add water and mix well.
-Add fresh coriander,mix and bring it to boil.
-Add fried seekh kababs and give it a good mix.
-Add cream,mix well and cook for 2 minutes.
-Add ginger and garnish with butter,fresh coriander,green chilli & serve!

-Frying pan mein cooking oil dal dein aur chicken seekh kabab ko tamam sides sa fry ker lein phir do hisson mein cut ker lein & side per rakh dein.
-Frying pan mein sabut dhania,zeera aur sabut lal mirch dal ker khusbu anay tak dry roast ker lein.
-Kaju dal dein aur light brown hunay tak dry roast ker lein.
-Thanda ker lein.
-Spice mixer mein roasted spices dal ker ache tarhan grind karein.
-Fried pyaz dal ker dubara grind ker lein & side per rakh dein.
-Pot mein cooking oil aur makhan dal ker melt ker lein.
-Adrak lehsan paste aur hari mirch paste dal ker ache tarhan mix karein.
-Grinded tamatar dal ker ache tarhan mix ker lein.
-Ab ground spices & pyaz dal ker ache tarhan mix karein aur oil alag hunay tak paka lein.
-Chulha bund ker dein aur dahi dal ker ache tarhan mix karein.
-Chulha on karein,namak,kali mirch powder aur garam masala powder dal ker ache tarhan mix ker lein.
-Pani dal ker ache tarhan mix karein.
-Hara dhania dal ker mix karein aur ubal anay dein.
-Fried seekh kababs dal ker mix ker lein.
-Cream dal ker ache tarhan mix karein aur 2 minutes kliya paka lein.
-Adrak dal dein,makhan,hara dhania aur hari mirch dal ker serve karein.
