Ingredients: * 1 lb. of Sea Bass * 1 lb. of Baby Spinach* 12 - 14 Cherry Tomatoes* 1 tsp. Lemon Zest* 1 tbsp. Lemon Juice* 2 Cloves Garlic* 2 tbsp. Butter* tsp. Thyme* 2 - 3 tbsp. of Vito and Joes Olive Oil* Pinchof Salt* Pinch of Ground PepperHow to Prepare1. Bring the fish to room temperature2. Cut the Tomatoes in halves3. Cut the Garlic into thin slices4. In a medium size frying pan, on medium heat add Vito and Joes Olive Oil, Tomatoes and Garlic, then stir5. Zest the lemon, then cut it in half for lemon juice6. When the Tomatoes and Garlic are soft, add in Salt, Pepper and a hint of Thyme7. Add 1tbsp. of Butter8. Add Lemon Zest9. When Butter melts, add Spinach then cover10. Put a cast iron pan on medium heat11. Lightly drizzle Vito and Joes Olive Oil on Sea Bass12. Salt, Pepper and Thyme both sides of Sea Bass13. When Spinach is done and cooked down remove from heat, stir and recover14. In the cast iron pan, put a tbsp. of Vito and Joes Olive Oil, Place the skin side of the Sea Bass down first15. After 2 minutes flip the fish over16. When the Sea Bass is almost done, add Butter and Lemon Juice directly on the Sea Bass17. To prep the plate, put the Tomatoes and Spinach down18. Place the Sea Bass directly on top of the Tomatoes and Spinach19. Drizzle a little bit of juice from the Sea Bass on top20.
