Breakfast Ciabatta with Eggs, Pancetta, and Cheese with Cooking Italian with Joe #cooking

What's your favorite breakfast? How about a Breakfast Ciabatta with pancetta, mozzarella, and marinara sauce all cooked in a toasted ciabatta!!! Join Joe Borio, host of the YouTube channel, Cooking Italian with Joe, as he shares a great recipe from his childhood and a go-to for his mom and dad.

Recipe:
One loaf of ciabatta or something similar
4 ounces of cubed mozzarella
4 ounces of browned pancetta
2 cups of marinara sauce
4 tables spoons of Vito and Joe's Extra Virgin Olive Oil
1 teaspoon of salt
5 eggs

Brown the pancetta in a pan. Take the ciabatta bread and carve out 5 equally spaced pocket holes, saving the pieces removed for toasting. Place the bread on a cookie sheet (cut in half if necessary to fit). Take the bread and brush olive oil all over the bread loaf, in the pockets, and on the leftover pieces with olive oil. Preheat oven to 375 degrees. Now place 2 tablespoons of marinara in each pocket. Next, take an egg and crack the egg empty the egg in each pocket. Now add some pancetta to each pocket. Last place a few pieces of chopped mozzarella in each pocket.
Now place the cookie sheet in the preheated oven for 15 to 20 minutes. Looking to see the egg yolk has started to become solid and the bread and pieces are all browning.
When done, remove from oven and let cool for 5 minutes.
Now cut the loaf into 5 equal pieces and serve each piece of bread with egg with a side piece of toasted from making the pockets. Pour a cup of coffee and enjoy! I love taking the toated piece and dipping it inside the egg pocket to get started. YUM!!!
