Seafood Double Delight (葱姜双鲜) | The Chinese Cuisine

This stir-fry combines fish and shrimp, which are tied together by aromatic ginger and green onions.

INGREDIENTS:
- 190g shrimp
- 300g diced swai fillet
- 20g green onions
- 15g ginger
- 3g salt
- 8g sugar
- 20 ml cooking wine
- 1 tbsp. cornstarch
- 1 tbsp. whisked egg
- 1/8 cup oil (we use light olive oil)

DIRECTIONS:
1. add half of the salt, half of the cooking wine, cornstarch, and whisked egg into the shrimp and diced fish
2. mix so that the ingredients evenly coat the fish and shrimp
3. marinate for 1 hour
4. add oil to pan on medium heat
5. fry the ginger strips in the oil, then remove when they are golden brown
6. add the shrimp and fish into the oil
7. cook briefly on one side until the outer coating solidifies
8. flip (doesn't have to be precise)
9. add in rest of the cooking wine and sugar
10. when the dish is almost done add in green onions and the rest of the salt
11. stir-fry briefly until the green onions and salt are evenly dispersed
12. serve and enjoy!
