Scrambled Eggs and Shrimp (滑蛋虾仁) | Chinese Cooking Demystified

This recipe is a classic Cantonese scrambled egg dish - shrimp and eggs. It's pretty easy and a classic at Hong Kong chachaanteng, though your can find it in restaurants throughout the PRD.

This version amps up the richness with a generous portion of lard (uh... healthy for the keto folks out there I guess). Here we're using the layering method of making scrambled eggs, though there's a ton of different egg scrambling methods so feel free to choose whatever one you prefer.
