Sausage and Spinach Stew | Sanjeev Kapoor Khazana

Healthy recipe of a stew with a combination of red kidney beans, sausages and shredded spinach.

SAUSAGE AND SPINACH STEW

Ingredients

7-8 chicken sausages, cut into 1 inch pieces
1 cup shredded spinach
3-4 cups chicken stock
1 tablespoon olive oil
1 medium onion, finely chopped
1 tablespoon chopped garlic
1 tablespoon refined flour
1 cup boiled kidney beans
Salt to taste
Crushed black peppercorns to taste

Method

1. Heat olive oil in a deep non-stick pan. Add onion and sauté till translucent.
2. Add garlic, mix and sauté for a minute. Add refined flour, mix and sauté for a minute.
3. Add kidney beans, mix and sauté for 2-3 minutes. Add sausage pieces, mix and sauté for 2 minutes.
4. Add stock, stir to mix and simmer for 2-3 minutes. Add salt and crushed peppercorns, stir to mix, cover and boil for 6-8 minutes.
5. Add spinach, stir to mix and bring to a boil.
6. Serve hot.

Preparation Time: 8-10 minutes
Cooking Time: 30-40 minutes
