Healthy recipe of a stew with a combination of red kidney beans, sausages and shredded spinach.SAUSAGE AND SPINACH STEW Ingredients7-8 chicken sausages, cut into 1 inch pieces1 cup shredded spinach3-4 cups chicken stock 1 tablespoon olive oil1 medium onion, finely chopped 1 tablespoon chopped garlic1 tablespoon refined flour1 cup boiled kidney beansSalt to tasteCrushed black peppercorns to tasteMethod1. Heat olive oil in a deep non-stick pan. Add onion and sauté till translucent.2. Add garlic, mix and sauté for a minute. Add refined flour, mix and sauté for a minute.3. Add kidney beans, mix and sauté for 2-3 minutes. Add sausage pieces, mix and sauté for 2 minutes.4. Add stock, stir to mix and simmer for 2-3 minutes. Add salt and crushed peppercorns, stir to mix, cover and boil for 6-8 minutes.5. Add spinach, stir to mix and bring to a boil.6. Serve hot.
