Pretty much meaning that this could be a sausage and peppers recipe with tomato sauce, or sausage and peppers no sauce. You could use any sausage that you like, any peppers or other veg that you like.Ingredients:1 pound (500g) Italian sausage2 Tbsp (30 mL) extra-virgin olive oil1 large red onion, sliced3 assorted bell peppers thinly sliced1 bulb fennel trimmed and sliced2 hot banana peppers, slicedSalt & Pepper to taste3 cloves garlic, minced½ tsp (2 mL) red pepper flakesScoop of Peperoncini Piccanti1 tsp (5 mL) oregano30 mL (2 Tbsp) tomato paste½ cup (125 mL) white wineHandful black olivesMethod:Slice the sausages into 1” lengths.Heat olive oil in a large pan over medium-high heat, toss in the sausage and brown all over.Remove the sausages, and add the onion to the pan and sauté until translucent.Toss in the peppers, fennel and garlic; cook & stir until they soften slightly.Add salt, pepper, oregano, red pepper flakes, Peperoncini Piccanti, and tomato paste; cook, stirring, 1 more minute.Stir in ½ cup wine; reduce heat to medium, cover and cook until the vegetables are tender- about 5 minutes.
