In this video, I am sharing the Sake & Food Pairing.
"Otsumami" is a Japanese word for food that serve with Sake.

Ingredients:
Tamagoyaki in hot Dashi Broth (pair with Nambu Bijin)
Tamagoyaki
3 large egg
1 1/2 teaspoons Mentsuyu
1/2 teaspoon potato starch (or corn starch)
2 tablespoons water
(Mentsuyu substitution: 3/4 teaspoon soy sauce, 3/4 teaspoon Mirin + 1/2 teaspoon Dashi powder)
Grated Daikon
5cm Daikon radish
1 dried chili
Hot Dashi Broth
100ml Dashi
1 tablespoon soy sauce (preferably light soy sauce)
1 tablespoon Mirin

"Buri-kama Shio-yaki"Grilled Yellowtail collar (pair with Kudoki Jozu)
300g Yellowtail collar
3g salt for marinating
3g salt for grilling
Sudachi citrus

"Gyusuji Nikomi"Stewed beef tendon and daikon (pair with Suigei)
500g Beef tendon
Precook in a pressure cooker with 1/2 cup Sake, 1/2 cup water, 20g ginger,
cooked water preserved
800g Daikon radish
1 Konnyaku (Konjac)
broth
2 cups (480ml) water water from precooked beef + freshwater
1/2 cup soy sauce
1/2 cup Mirin
2 tablespoons sugar
1 tablespoon yellow miso
30g ginger
1 clove garlic

Corn Tempura(pair with Jozen Aged)
1 fresh sweet corn
1 tablespoon Tempura flour for dusting
2 tablespoons Tempura flour + 1 1/2 to 2 tablespoons icy cold water
1.5 tablespoons all-purpose flour, 0.5 tablespoon potato starch, a pinch of baking soda, 1 teaspoon egg, 1~2 tablespoon icy cold water
oil for frying
sea salt for serving

3 simple "Otsumami"(pair with Dassai 45)
Edamame
"Hiya-Yakko" Chilled tofu
Firm Tofu
Umeboshi
Shiso leaf
Stri-fried Shishito Pepper
50g Shishito pepper
1 teaspoon soy sauce
1 tablespoon Katsuo Bushi (bonito flakes)

Japanese style Pinchos
Cream cheese and Nara-dzuke
cream cheese
Nara-dzuke (or other pickles)
Cream cheese and Yokan
cream cheese
Yokan (red bean patty )
