Rushichi Bhaji (ऋषींची भाजी) Recipe | Homemade Ruschi Panchami Bhaji By Archana | India Food Network

Made on the festive occasion of 'Ruschi Panchami' the day after Ganpati, Ruschichi Bhaji (ऋषींची भाजी) contains a lot of fresh vegetables cooked in a mangosteen and coconut based sauce.

Ingredients
1 big bowl of mixed vegetables ( Raw banans, potatoes, gourd, elephant foot yam, beans, red spinach stems, colocasia stems, etc)
TIP You can use any vegetables available at your disposal
1 bowl lal bhaji (red spinach)
1 bowl paste of kokam (mangosteen), cumin, grated coconut, chillies.
1 cup ground nuts
2 corns

This Vegetable is generally made once a year and is very dear to all Maharashtrians. This is one such preparation where you have the freedom to use any and every vegetable you wish to. The more the vegetables the better it is going to taste.
