750g Strawberries, washed and hulled
30g Caster Sugar

ITALIAN MERINGUE
235g Caster Sugar
20g Liquid Glucose
80g Water
100g Egg White
Pinch of Salt
2-3 tbsp Finely Chopped Mint

CRYSTALLISED MINT LEAVES
Mint Leaves
1 Egg White
