Roasted Cauliflower With Lemon And Parmesan RecipeIngredients:½ head cauliflower, cut into florets30 mL (2 Tbsp) oilZest of 1 lemonJuice of ½ lemonSalt and pepper to taste125 mL (½ cup) Parmesan cheese, gratedMethod:Preheat the oven to 245ºC (475ºF).Cut the cauliflower into smallish florets. Place in a large bowl along with the oil, lemon juice, salt, pepper, and half the grated cheese. Toss well, making sure to evenly coat the cauliflower. Spread into a cast iron pan or baking sheet in an even layer.Roast for 15 - 20 minutes, then stir.Then stir every 5 minutes or so and pull out of the oven when it is roasted and golden brown.This should be around 35-40 minutes.Remove the pan from the oven and sprinkle on the remaining Parmesan.
